I got inspired to turn it into a savory burrito bowl and was so convinced about this and so excited to share it with you. I think Ella thought I was crazy but I told her to wait until you try it. She loved it and we devoured two bowls!

Ingredients 

  • 1 cup fat-free cottage cheese
  • 1/2 cup salsa of choice, we like fresh
  • 1/4 cup black beans
  • 1/4 cup pinto beans
  • 1/4 cup corn, fresh, frozen, or canned
  • 1/4 cup diced tomatoes
  • 1 tablespoon diced red onion
  • 1 tablespoon chopped fresh cilantro

Instructions

    This was… interesting. Not bad at all and I will definitely make it again with a few tweaks. I can see this being really good if warmed or blended up (the cottage cheese and salsa) and used as a crema for taco night

    Regardless, this was still a solid recipe especially if you’re short on time! It filled me up fast 🙂
