SAVORY COTTAGE CHEESE BURRITO BOWL

Ingredients
- 1 cup fat-free cottage cheese
- 1/2 cup salsa of choice, we like fresh
- 1/4 cup black beans
- 1/4 cup pinto beans
- 1/4 cup corn, fresh, frozen, or canned
- 1/4 cup diced tomatoes
- 1 tablespoon diced red onion
- 1 tablespoon chopped fresh cilantro
Instructions
- Rinse and drain the pinto beans and black beans. After that, use fresh corn, defrost frozen corn, or drain canned corn. Then, dice the red onion, dice the tomatoes and chop the cilantro.
- Mix the cottage cheese and salsa. This is the base of your bowl.
- Add the pinto beans, black beans, corn, tomatoes, and red onion on top of the cottage cheese and salsa mixture.
