How To Make Asian Cucumber Salad

Easy Asian cucumber salad ingredients

To make this easy Asian cucumber salad, start by grating the cucumber. Make sure to thoroughly drain the cucumber after grating it because there will be a lot of liquid. Next, wash, dry, and finely chop the fresh basil, fresh cilantro, and green onions. Then, cut the small baby tomatoes in half or into quarters.

After that, combine the cucumber, basil, cilantro, green onions, small baby tomatoes, shredded carrots, and garbanzo beans in a large bowl. Also, squeeze lime juice on top of the salad.

Next, make the peanut dressing and pour it on top of the salad. Make sure to double our peanut sauce recipe and add an extra 2 TBSP of unsweetened vanilla almond milk to thin it out. Then, thoroughly toss all of the ingredients and enjoy!

Some other amazing options are hearts of palm noodles, low-carb pasta noodles, whole wheat noodles, and gluten-free noodles.

How To Make Peanut Dressing For The Asian Cucumber Salad

We added our own twist to this easy Asian cucumber salad by using our peanut sauce as a dressing. When making the peanut sauce, make sure to double the recipe so there is enough for the entire salad. Also, add 2 extra tablespoons of unsweetened vanilla almond milk to thin out the sauce and make it a dressing. It’s definitely worth making because it adds so much amazing flavor to this salad!

This Asian cucumber salad is delicious as is, but feel free to add more toppings if you would like. Ella loves adding some avocado to her salad. I love adding some grilled chicken breast or grilled shrimp for added protein.

Ingredients 

  • 2 English cucumbers, grated
  • 15-20 leaves finely chopped fresh basil
  • 1/3 cup finely chopped cilantro
  • 4-6 green onions, chopped
  • 1 package small baby tomatoes
  • 1 cup shredded carrots
  • 1/2 cup garbanzo beans
  • 1 lime, squeezed

  • grilled chicken breast, grilled shrimp, avocado, optional

Instructions 

  • Grate the cucumber using the biggest side of a box grater with the largest holes. Make sure to thoroughly drain the cucumber after grating it because there will be a lot of liquid. It is super important to remove the excess liquid so the flavors of the dressing come through. Wash, dry, and finely chop the fresh basil, fresh cilantro, and green onions. Then, cut the small baby tomatoes in half or into quarters.
  • In a large bowl combine the cucumber, basil, cilantro, green onions, small baby tomatoes, shredded carrots, and garbanzo beans. After that, squeeze lime juice on top of the salad.
  • Make the peanut dressing and pour it on top of the salad. Make sure to double our peanut sauce recipe and add an extra 2 tablespoons of unsweetened vanilla almond milk. This is to make it thinner so it can be used as a salad dressing. Thoroughly toss all of the ingredients. Optional: Add some grilled chicken, grilled shrimp, or avocado to your salad. Enjoy!
