- 1 large watermelon
- 4 ounces light feta cheese
- 2 tablespoons aged balsamic vinegar
- 2 tablespoons mint leaves thinly chopped
Cut the watermelon into 1-2 inch wedges. Then, cut it into pizza slices.
Wash and dry the mint leaves. After that, chop the mint leaves into thin pieces.
Sprinkle the light feta cheese and mint on top of the watermelon slices. Also, drizzle the balsamic vinegar on top. Enjoy!
- Mint: If you don't like mint you can omit it or replace it with freshly chopped basil.
- Watermelon: Both yellow and red watermelons work perfectly in this recipe.
