WATERMELON FETA SALAD
This watermelon feta salad is the ultimate refreshing summer salad! It is made with ripe sweet juicy watermelon, savory salty feta, and fresh mint leaves.

- 6 cups of bite-sized cubes of seedless watermelon
- 3 ounces crumbled feta cheese fat-free, light, or regular
- 6-8 large fresh mint leaves thinly sliced or torn
- 1 drizzle of balsamic glaze
Cut a ripe, seedless watermelon into small bite-sized cubes. Then, add the cubes of watermelon to an airtight container with a lid. Next, place the sealed container of watermelon in the refrigerator for a few hours.
Drain the excess liquid from the watermelon. You can remove the liquid from the container or place the watermelon in a strainer.
Once drained, add the watermelon to a bowl. Then, add the crumbled feta cheese and thinly sliced fresh mint leaves to the bowl.
Lightly mix and drizzle the balsamic glaze on top when you are ready to serve this salad. Serve it chilled, and enjoy!
- Watermelon: Cut the watermelon into small bite-sized cubes that are consistent in size.
- Feta: You can use fat-free, light, or regular feta in this recipe.
- Mint Substitute: If you don’t want to use fresh mint in this recipe, substitute it for fresh sliced basil.
- Storage: Store leftovers in an airtight container in the refrigerator for 1-2 days.
