- 1 cup low-fat 2% cottage cheese
- 3/4 cup frozen strawberries
- 2 tablespoons sweetener of choice
- 1/4 teaspoon lemon juice
Add the cottage cheese, frozen strawberries, sweetener, and lemon juice to a high-powered blender or food processor and thoroughly blend until smooth.
Pour the mixture into a freezer-safe container. Put a lid on the container and freeze the cottage cheese ice cream for 4-5 hours. Make sure to stir it every hour while it freezes so it doesn’t get icy. Once frozen, scoop the ice cream and enjoy!
You can freeze it overnight if you have a Ninja Creami. It will come out perfect. Mix once, then add 1 tablespoon of your milk of choice and re-mix in the Creami.
- Cottage Cheese: Full-fat, low-fat, or fat-free cottage cheese will work.
- Flavor: You can make other flavors of cottage cheese ice cream! Use your favorite frozen fruit such as blueberries, raspberries, or mixed berries instead of the strawberries in this recipe.
- Storage: We recommend enjoying this cottage cheese ice cream once it is frozen, about 4-5 hours. If you store leftovers too long they will get icy.
