For The Strawberries
- 1 cup fresh chopped strawberries
- 1/2 teaspoon sweetener of choice
- 1/2 teaspoon cornstarch
- 1/4 teaspoon freshly squeezed lemon juice
- 1/4 teaspoon vanilla extract
For The Crumble Topping
- 1/4 cup quick oats
- 1 teaspoon all-purpose flour
- 1 teaspoon sweetener of choice
- 1 pinch of cinnamon
- 1 pinch of salt
- 2 teaspoons light butter cut into small pieces
Cut the strawberries into small pieces. Then, mix the strawberries, sweetener, cornstarch, freshly squeezed lemon juice, and vanilla extract together in a bowl.
Cut the butter into small pieces. Then, combine the quick oats, all-purpose flour, sweetener, cinnamon, salt, and butter in a separate bowl. Use your hands or a fork to combine these ingredients.
Pour the strawberry mixture into an oven-safe ramekin and then add the crumble on top. Place the ramekin on a sheet pan and bake the strawberry crumble at 350℉ for 24-26 minutes. Once done, let the ramekin cool and enjoy the strawberry crumble warm!
- Sweetener: Use your sweetener of choice. Brown sugar, honey, maple syrup, or a sugar-free sweetener all work.
- Oats: It's best to use quick oats for the crumble topping because they are smaller than rolled oats and cook faster. If you don’t have quick oats, lightly pulse rolled oats in a food processor.
- Butter: Cut the butter into small pieces so the crumble comes together easily.
