SHAVED BRUSSELS SPROUT SALAD WITH PECANS

This is the ultimate shaved brussels sprout salad! It’s so perfect with crunchy apples, dried sweet cranberries, salty feta, pecans, and a honey lemon dressing.

Ingredients

  • 1 pound shaved Brussels sprouts see options in the post
  • 1/3 cup dried sweetened cranberries roughly chopped
  • 2 medium-sized Pink Lady apples chopped
  • 8 ounces light feta
  • 1 small red onion shaved thin
  • 1/4 cup pecans roughly chopped
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, 1-2 cloves
  • 2 teaspoons stone-ground mustard
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  • Rough chop the dried sweetened cranberries and pecans. After that, wash and dry the apples. Then, chop the apples into small pieces.
  • Cut both ends of the onion off and remove the skin. Then, carefully shave the onion into thin pieces. We like to carefully use a mandoline with a guard to shave them so they are extra thin.
  • Wash and dry the brussels sprouts. Then, cut the ends off of the brussels sprouts. Very carefully shave the brussels sprouts. Do not shave the stems of the brussels sprouts. We carefully used a mandoline with a guard. Or, you could cut the ends off and shred them with a food processor. Also, you can use pre-shaved brussels sprouts in this recipe.
  • Add the shaved brussels sprouts, chopped apples, chopped dried cranberries, chopped pecans, shaved red onions, and light feta to a large bowl.
  • To make the dressing, add the lemon juice, olive oil, garlic, stone-ground mustard, honey, salt, and pepper to a bowl. Thoroughly combine these ingredients.
  • Drizzle the dressing over the salad, toss the salad, and enjoy!

Notes

  • Pecans Substitution: Use slivered almonds or walnuts in this recipe instead.
  • Cheese: We used light feta in this recipe. Shaved parmesan or goat cheese would also work well.
  • Apples: We used Pink Lady apples. Honey crisp apples will work well or even Granny Smith if you want a tart burst of flavor.
  • Brussels Sprouts: If you use fresh whole Brussels sprouts in this recipe, we recommend buying 1.5 pounds of them. The recipe calls for 1 pound of shaved Brussels sprouts. By the time you shred them and discard the ends, you will have about 1 pound of shaved Brussels sprouts. Or, feel free to use 1 pound of pre-shaved Brussels sprouts.
 
One serving is about 1 cup of shaved Brussels sprout salad.
