- 4 pounds Roma tomatoes
- 3 garlic cloves
- 2 teaspoons Italian herbs
- 1 tablespoon olive oil
- 1 ½ teaspoons salt
- 1/4 teaspoon pepper
- 1/2 cup diced onion white or sweet
Wash and dry the Roma tomatoes. Then, slice all the tomatoes in half lengthwise and add them to a large bowl.
Add the crushed garlic cloves, Italian herbs, olive oil, salt, pepper, and diced onion to the bowl with the tomatoes.
Thoroughly mix to coat the tomatoes in the seasonings.
Line a sheet pan with parchment paper. Then, place the seasoned tomatoes cut side up on the sheet pan.
Roast the seasoned tomatoes in the oven at 450°F for 45-55 minutes.
Once roasted, let the tomatoes cool for about 10-15 minutes. Then, add them to a blender and thoroughly blend until you have a smooth sauce.
- Don’t Remove The Seeds: Simply slice the Roma tomatoes in half, there is no need to remove the seeds or peel the tomatoes. Also, don't remove the roasted tomato skins, just blend the tomatoes into a sauce.
- Let The Tomatoes Cool: After roasting the tomatoes, let them cool before blending them.
- Serving: This recipe makes about 4.5 cups of roasted tomato sauce.
- Storage: Store leftover roasted tomato sauce in an airtight container or a Mason jar in the refrigerator for 4-5 days.
