ROASTED TOMATO COTTAGE CHEESE CAPRESE BOWL

- 1 cup cherry tomatoes halved
- 1 teaspoon olive oil
- 1 small garlic clove
- 1/4 teaspoon Italian seasoning
- 1 pinch of salt
- 1 pinch of pepper
- 1 cup cottage cheese
- 1 teaspoon balsamic glaze
- 4-5 fresh basil leaves chopped
Add the olive oil, garlic, Italian seasoning, salt, and pepper to a large bowl. Then, mix to combine these seasonings.
Slice the cherry tomatoes in half and add them to the bowl. After that, toss to evenly coat the tomatoes in the seasoning mixture.
Spread the seasoned tomatoes face-side up on a baking sheet lined with parchment paper.
Roast the tomatoes in the oven at 400°F for 15-20 minutes, or until soft and slightly caramelized.
Add the cottage cheese to a bowl. Top with the roasted tomatoes, a drizzle of balsamic glaze, and chopped fresh basil. Then, serve and enjoy!
- Air Fryer Method: Preheat your air fryer to 375°F (190°C). Spread the tomatoes in a single layer and air fry for 8-10 minutes, shaking the basket halfway through.
- Cottage Cheese: You can use fat-free, low-fat, or full-fat cottage cheese in this recipe.
- Tomatoes: Cherry tomatoes or grape tomatoes work best.
