ROASTED TOMATO COTTAGE CHEESE CAPRESE BOWL

This Roasted Tomato Cottage Cheese Caprese Bowl is delicious! If you love Caprese salad or tomatoes with burrata and basil, this lighter version is a must-try.

Ingredients

  • 1 cup cherry tomatoes halved
  • 1 teaspoon olive oil
  • 1 small garlic clove
  • 1/4 teaspoon Italian seasoning
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 cup cottage cheese
  • 1 teaspoon balsamic glaze
  • 4-5 fresh basil leaves chopped

Instructions

  • Add the olive oil, garlic, Italian seasoning, salt, and pepper to a large bowl. Then, mix to combine these seasonings.
  • Slice the cherry tomatoes in half and add them to the bowl. After that, toss to evenly coat the tomatoes in the seasoning mixture.
  • Spread the seasoned tomatoes face-side up on a baking sheet lined with parchment paper.
  • Roast the tomatoes in the oven at 400°F for 15-20 minutes, or until soft and slightly caramelized.
  • Add the cottage cheese to a bowl. Top with the roasted tomatoes, a drizzle of balsamic glaze, and chopped fresh basil. Then, serve and enjoy!

Notes

  • Air Fryer Method: Preheat your air fryer to 375°F (190°C). Spread the tomatoes in a single layer and air fry for 8-10 minutes, shaking the basket halfway through.
  • Cottage Cheese: You can use fat-free, low-fat, or full-fat cottage cheese in this recipe.
  • Tomatoes: Cherry tomatoes or grape tomatoes work best.
