- 4 medium sweet potatoes
- 2 teaspoons olive oil
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 garlic cloves or 1/2 teaspoon garlic powder
Wash and peel the sweet potatoes. Then, cut them into even-sized cubes, about 1/2 to 1 inch in size.
Add the chopped sweet potatoes to a large bowl. Next, add the olive oil, pumpkin pie spice, smoked paprika, salt, pepper, and garlic to the bowl. Thoroughly mix to coat the sweet potatoes evenly in the seasonings.
Place the sweet potatoes on a sheet pan lined with parchment paper. Bake them at 400°F for 35-40 minutes. Once done, let them slightly cool and enjoy!
- Storage: These oven-roasted sweet potatoes will last 2-3 days in the refrigerator when stored in an airtight container.
- Pumpkin Pie Spice Swap: If you don’t have pumpkin pie spice, you can substitute it with ¼ TSP of cumin and ¼ TSP of cinnamon.
