OVEN ROASTED SWEET POTATOES

These oven-roasted sweet potatoes make the perfect side dish and have a delicious balance of sweet and savory flavor.

Ingredients

  • 4 medium sweet potatoes
  • 2 teaspoons olive oil
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 garlic cloves or 1/2 teaspoon garlic powder

Instructions

  • Wash and peel the sweet potatoes. Then, cut them into even-sized cubes, about 1/2 to 1 inch in size.
  • Add the chopped sweet potatoes to a large bowl. Next, add the olive oil, pumpkin pie spice, smoked paprika, salt, pepper, and garlic to the bowl. Thoroughly mix to coat the sweet potatoes evenly in the seasonings.
  • Place the sweet potatoes on a sheet pan lined with parchment paper. Bake them at 400°F for 35-40 minutes. Once done, let them slightly cool and enjoy!

  • Storage: These oven-roasted sweet potatoes will last 2-3 days in the refrigerator when stored in an airtight container.
  • Pumpkin Pie Spice Swap: If you don’t have pumpkin pie spice, you can substitute it with ¼ TSP of cumin and ¼ TSP of cinnamon.
