OATMEAL CHOCOLATE COOKIES

We definitely perfected these oatmeal chocolate cookies! This cookie has a wonderful chewy texture from the oats and is packed with chocolate. I recommend eating them warm out of the oven as you will get warm melted chocolate in every bite.

Ingredients

  • 1 cup old fashioned rolled oats or quick oats
  • 1/4 cup unsweetened applesauce
  • 1/4 cup brown sugar or sweetener of choice
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips
  • 1 egg
  • 3 tablespoons Dutch-processed cocoa powder, or cacao powder

Instructions

  • Add the old-fashioned rolled oats, unsweetened applesauce, brown sugar, baking powder, salt, vanilla extract, mini chocolate chips, egg, and Dutch-processed cocoa powder or cacao powder to a bowl.
  • Thoroughly combine all the ingredients in the bowl.
  • Use a cookie scoop to form 15 cookies. Place the cookies on a baking sheet with parchment paper or a silicone baking mat. Lightly press down to spread the cookies on the baking sheet. Bake the cookies at 350° F for 13-15 minutes and enjoy!

  • Gluten-Free: These oatmeal chocolate cookies are gluten-free! Just use gluten-free rolled oats in this recipe.
  • Vegan Option: You can make these oatmeal chocolate cookies vegan! To do this, substitute the egg for a chia egg. To make a chia egg, combine 1 tablespoon of chia seeds and 3 tablespoons of water. Then, let it sit for 10-15 minutes or until it thickens and has a gel-like consistency. After that, it is ready to be added to the recipe. Or, you can make a flax egg by combining 1 tablespoon of flaxseed meal and 3 tablespoons of water.
