MEXICAN STREET CORN DIP

This easy and healthy Mexican street corn dip is a delicious appetizer that captures the flavors of traditional Mexican street corn, also known as elote.

Ingredients

  • 16 ounces frozen corn, can substitute for grilled fresh corn or rinsed and drained canned corn
  • 1/4 cup 0-fat Greek yogurt
  • 1 tablespoon light mayonnaise
  • 1/2 teaspoon fresh lime juice
  • 4 ounces fire-roasted diced green chiles
  • 1/2 teaspoon taco seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup chopped red bell pepper
  • 1/4 cup sliced green onions
  • 4 ounces light feta cheese or cotija cheese
  • 2 tablespoons fresh chopped cilantro

Instructions

  • Add the 0-fat Greek yogurt, light mayonnaise, and fresh lime juice to a large bowl. Then, thoroughly mix. After that, add the fire-roasted diced green chiles, taco seasoning, garlic powder, onion powder, salt, and pepper to the large bowl and mix.
  • Add the corn, chopped red bell pepper, sliced green onions, light feta cheese or cotija cheese, and fresh chopped cilantro to the bowl. If you use frozen corn, there is no need to defrost it. The corn will defrost after mixing in about 20 minutes.
  • Thoroughly mix all the ingredients and place the dip in an airtight container. Refrigerate it until you are ready to use and enjoy!

Notes

  • Cheese: You can use feta cheese or cotija cheese for this recipe.
  • Corn: You can use regular frozen or frozen roasted corn. If you use canned corn, make sure to rinse and drain the corn. Also, you can grill fresh corn on the cob and then slice the corn off for this dip.
  • Yogurt: We made this dip with 0-fat Greek yogurt. If you prefer, you can use reduced-fat or full-fat Greek yogurt. Just make sure to use plain Greek yogurt.
  • Storage: Store leftovers in an airtight container in the refrigerator for 3-4 days.
