- 8 ounces uncooked pasta of choice
- 1 teaspoon olive oil
- 2 tablespoons finely chopped shallot
- 2 cloves garlic crushed
- 1 ½ cups 2% milk
- 5 tablespoons reduced-fat cream cheese
- 2 tablespoons grated parmesan cheese
- 1/3 cup sun-dried tomatoes not in oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1/4 teaspoon Italian seasoning
- 8-10 ounces shredded rotisserie chicken
- 2 teaspoons cornstarch
- 3 tablespoons fresh basil
- 1 pinch red pepper flakes optional
Cook the pasta until al dente according to the package directions. Once done, drain and set aside.
Place sun-dried tomatoes in a heat-safe bowl with hot water to soften for about 10 minutes, then drain the water and chop them into small pieces.
Heat the olive oil in a large skillet over medium-low heat. Sauté the finely chopped shallot and crushed garlic cloves for about 2-3 minutes, until translucent and fragrant.
Remove the skillet from the heat. Then, pour in the milk, cream cheese, Parmesan, sun-dried tomatoes, salt, pepper, and Italian seasoning. Return the skillet to the stove over low heat so the milk doesn’t curdle and mix until the cream cheese is fully incorporated.
To thicken the sauce, mix 2 teaspoons of cornstarch with 2 teaspoons of cold water to create a slurry. After that, stir the slurry into the sauce and continue cooking on low until thickened.
Mix in the shredded rotisserie chicken and drained cooked pasta until evenly coated with the sauce.
Garnish with fresh basil and optional red pepper flakes, and enjoy!
- Sauce Thickness: If the sauce gets too thick from the cornstarch slurry, add a little more milk until the desired consistency is reached.
- Pasta Options: Choose your favorite pasta shape like penne, rigatoni, or fettuccine. You can also use gluten-free, chickpea, protein, or whole wheat pasta. For other options, try Carba Nada, Palmini, or Fiber Gourmet Pasta. If you prefer a low-carb alternative, serve the sauce over spaghetti squash or lentils. Any of these choices will pair perfectly with the creamy, flavorful sauce!
- Chicken Options: Use shredded rotisserie chicken for an easy and quick option. For another option, use our slow cooker shredded chicken recipe. Or, fully cook boneless skinless chicken breasts and shred them or cut them into bite-sized pieces. You could even use boneless skinless chicken thighs instead.
