Wash and dry a fresh lemon. Then, zest the yellow rind of the lemon, avoiding the pith, the bitter white part. Also, freshly squeeze the lemon juice.
Add the cashews and unsweetened coconut flakes to a food processor. Then, place the lid on the food processor and thoroughly pulse these ingredients.
Add the pitted Medjool dates, fresh lemon juice, lemon zest, and maple syrup to the food processor. Then, thoroughly pulse all the ingredients until well combined.
Carefully remove the blade from the food processor. Then, use a 2-teaspoon cookie scoop to form the bliss balls and use your hands to roll them. After that, as an option, roll the bliss balls in unsweetened shredded coconut.
