LEMON BLISS BALLS

Ingredients

  • 6 ounces pitted Medjool dates
  • 4 ounces unsalted cashews
  • 1 ounce unsweetened coconut flakes
  • 4 teaspoons fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 1 teaspoon maple syrup
  • unsweetened shredded coconut for rolling

Instructions

  • Add the pitted Medjool dates to a large heat-safe bowl. Then, pour hot water over them and let them soak for 5-10 minutes. This helps soften them for easier blending in the food processor. Once done soaking, drain the water from the bowl. If your dates weren’t already pitted, remove the pits now.
  • Wash and dry a fresh lemon. Then, zest the yellow rind of the lemon, avoiding the pith, the bitter white part. Also, freshly squeeze the lemon juice.
  • Add the cashews and unsweetened coconut flakes to a food processor. Then, place the lid on the food processor and thoroughly pulse these ingredients.
  • Add the pitted Medjool dates, fresh lemon juice, lemon zest, and maple syrup to the food processor. Then, thoroughly pulse all the ingredients until well combined.
  • Carefully remove the blade from the food processor. Then, use a 2-teaspoon cookie scoop to form the bliss balls and use your hands to roll them. After that, as an option, roll the bliss balls in unsweetened shredded coconut.

Notes

  • Storage: Store leftover lemon bliss balls in an airtight container in the refrigerator for 4-5 days or in the freezer for 1-2 months.
  • Bliss Balls: Use a small 2-teaspoon cookie scoop to form the mixture into balls. Using a cookie scoop ensures that the bliss balls are the same size and makes it easy to roll them into balls.
  • Soften The Dates: It is helpful to soak the dates in a bowl of hot water to soften them. This makes it easier for the food processor to pulse and evenly distribute them.
  • Pitted Dates: Buy pitted Medjool dates or remove the pits from the Medjool dates yourself. It is easier to remove the pits from the dates after they have soaked and softened.
  • Chill: You can chill the mixture before forming the bliss balls so it is easier to roll it. Or, you can chill them after you roll them into balls.
