In addition to cauliflower, we added 0-fat Greek yogurt to these mashed potatoes. The Greek yogurt adds a creamy texture without the extra calories of traditional butter or heavy cream.

  • Salt: Add salt to the pot of cold water before bringing the potatoes to a boil.
  • Cauliflower: Use 12 ounces of frozen or fresh riced cauliflower.
  • Light Butter: Add one tablespoon of light butter.
  • Garlic: Use three garlic cloves for incredible flavor.
  • Greek Yogurt: Use 0-fat Greek yogurt. The Greek yogurt adds protein and creaminess.
  • Ranch Seasoning: Add dry ranch seasoning to give these mashed potatoes so much delicious flavor!

How To Make Cauliflower Mashed Potatoes

Step 1: If you’re using frozen riced cauliflower, let it defrost while you work on the potatoes. Wash, peel, and cut the Yukon gold potatoes into uniform, small pieces. Then, add the chopped potatoes to a large pot or Dutch oven and cover them with cold water, adding 2 tablespoons of salt. Make sure the water covers the potatoes by about 1-2 inches. After that, bring the pot to a boil over high heat.

Step 2: Once the water reaches a rolling boil, cook the potatoes for an additional 15-20 minutes, until the potatoes are fork-tender. When the potatoes are nearly done, add the riced cauliflower to the pot and boil for an additional 5-6 minutes until both the potatoes and cauliflower are fully tender.

Step 3: Drain the potatoes and cauliflower using a strainer. Meanwhile, melt the light butter in the pot. Then, add the crushed garlic to the pot and sauté it over low heat.

Step 4: In a small bowl, mix the Greek yogurt and ranch seasoning. Add the drained potatoes and cauliflower to the pot with the butter and garlic, and mash using a potato masher. While mashing, incorporate the Greek yogurt and ranch mixture. Mash just enough to combine everything, avoid over-mashing. Then, serve these mashed potatoes and enjoy!

  • Cook the Potatoes in Cold Water: It is important that the chopped potatoes begin cooking in cold salted water. This ensures that the potatoes will cook evenly.
  • Don’t Over-Mix Mashed Potatoes: It is very important not to over-mash or over-mix your mashed potatoes. This prevents them from becoming gummy.
  • How to Thin Out Mashed Potatoes: If your mashed potatoes turn out too thick or you would like them to be a thinner consistency, you can always add some milk.
