For The Whipped Feta
- 1 ½ cups cottage cheese fat-free, low-fat, or full-fat
- 1/3 cup light feta cheese
- 1 small garlic clove
- 1 tablespoon lemon juice
- 1/4 teaspoon lemon zest
- 1 pinch salt
For The Toppings
- 1/4 cup chopped English or Persian cucumber
- 1/3 cup cherry tomatoes sliced
- 1 teaspoon olive oil
- 3-4 large basil leaves chopped
- 1 pinch salt
- 1 pinch pepper
Add the cottage cheese, light feta cheese, garlic clove, lemon juice, lemon zest, and a pinch of salt to a food processor.
Blend until the mixture is completely smooth and creamy, scraping down the sides as needed.
Transfer the whipped feta mixture to a shallow serving bowl and use the back of a spoon to create a small well in the center.
In a small bowl, combine the chopped cucumber, sliced cherry tomatoes, olive oil, chopped basil, and a pinch of salt and pepper. Toss gently until everything is evenly coated.
Spoon the cucumber and tomato mixture into the center of the whipped feta. Serve immediately with pita chips, toasted bread, or fresh veggies.
