Ingredients

For The Whipped Feta

  • 1 ½ cups cottage cheese fat-free, low-fat, or full-fat
  • 1/3 cup light feta cheese
  • 1 small garlic clove
  • 1 tablespoon lemon juice
  • 1/4 teaspoon lemon zest
  • 1 pinch salt

For The Toppings

  • 1/4 cup chopped English or Persian cucumber
  • 1/3 cup cherry tomatoes sliced
  • 1 teaspoon olive oil
  • 3-4 large basil leaves chopped
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  • Add the cottage cheese, light feta cheese, garlic clove, lemon juice, lemon zest, and a pinch of salt to a food processor.
  • Blend until the mixture is completely smooth and creamy, scraping down the sides as needed.
  • Transfer the whipped feta mixture to a shallow serving bowl and use the back of a spoon to create a small well in the center.
  • In a small bowl, combine the chopped cucumber, sliced cherry tomatoes, olive oil, chopped basil, and a pinch of salt and pepper. Toss gently until everything is evenly coated.
  • Spoon the cucumber and tomato mixture into the center of the whipped feta. Serve immediately with pita chips, toasted bread, or fresh veggies.
