HEALTHY PUMPKIN SPICE GRANOLA RECIPE

This is the ultimate healthy pumpkin spice granola recipe! It is a delicious snack on its own or enjoyed with yogurt and berries.

Ingredients

  • 1/2 cup rolled oats
  • 1 tablespoon lightly salted pumpkin seeds
  • 2 tablespoons pumpkin puree
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon vanilla extract
  • 2 teaspoons maple syrup

Instructions

  • Add the pumpkin puree, pumpkin pie spice, cinnamon, vanilla extract, and maple syrup to a large bowl. Thoroughly mix these ingredients.
  • Add the rolled oats and lightly salted pumpkin seeds to the bowl and mix until combined.
  • Evenly spread the pumpkin granola on a sheet pan with parchment paper.
  • Bake the granola at 350°F for 18-22 minutes. Halfway through, carefully flip the granola so it gets crispy on both sides. Once cooked, let the granola cool, and enjoy!

  • Sweetener: This recipe works with maple syrup, honey, or regular sugar.
  • Gluten-Free: This pumpkin granola can be made gluten-free. Just use certified gluten-free rolled oats.
  • Storage: Make sure the granola is completely cool after baking. Then, transfer it to an airtight container or a resealable plastic bag and store it at room temperature for up to 5 days.
