HEALTHY BANANA MUFFINS

These healthy banana muffins are bursting with luscious banana flavor! There is no oil or butter in these muffins, and they are a delicious breakfast or snack.

Ingredients

  • 4 medium-sized ripe bananas
  • 2 eggs
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 3/4 cup sugar or sugar substitute with a 1:1 ratio
  • 1 ¾ cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 pinch of nutmeg

Instructions

  • Peel the bananas and add them to a large bowl. Then, mash the bananas with a fork.
  • Add the eggs, unsweetened applesauce, and vanilla extract to the bowl with the mashed bananas. Then, whisk these wet ingredients together.
  • Add the sugar to the bowl with the wet ingredients and mix.
  • In a separate large bowl, mix the all-purpose flour, baking soda, salt, cinnamon, and nutmeg.
  • Add the dry ingredients to the wet ingredients a little at a time and mix. Combine the wet and dry ingredients, but don’t overmix.
  • Lightly spray a non-stick silicone muffin pan with oil or use muffin liners. Then, pour the batter into the muffin liners. This recipe makes 12-16 muffins.
  • Bake the muffins at 350℉ for 24-26 minutes. Once done, let the muffins cool on a cooling rack and enjoy!

Notes

  • Flour Options: We used all-purpose flour to make these banana muffins. However, you could also use whole wheat pastry flour or a gluten-free all-purpose flour blend.
  • Chocolate Chips: You can add chocolate chips to these banana muffins for a burst of chocolate flavor.
