HEALTHY BANANA MUFFINS
These healthy banana muffins are bursting with luscious banana flavor! There is no oil or butter in these muffins, and they are a delicious breakfast or snack.

- 4 medium-sized ripe bananas
- 2 eggs
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 3/4 cup sugar or sugar substitute with a 1:1 ratio
- 1 ¾ cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 pinch of nutmeg
Peel the bananas and add them to a large bowl. Then, mash the bananas with a fork.
Add the eggs, unsweetened applesauce, and vanilla extract to the bowl with the mashed bananas. Then, whisk these wet ingredients together.
Add the sugar to the bowl with the wet ingredients and mix.
In a separate large bowl, mix the all-purpose flour, baking soda, salt, cinnamon, and nutmeg.
Add the dry ingredients to the wet ingredients a little at a time and mix. Combine the wet and dry ingredients, but don’t overmix.
Lightly spray a non-stick silicone muffin pan with oil or use muffin liners. Then, pour the batter into the muffin liners. This recipe makes 12-16 muffins.
Bake the muffins at 350℉ for 24-26 minutes. Once done, let the muffins cool on a cooling rack and enjoy!
- Flour Options: We used all-purpose flour to make these banana muffins. However, you could also use whole wheat pastry flour or a gluten-free all-purpose flour blend.
- Chocolate Chips: You can add chocolate chips to these banana muffins for a burst of chocolate flavor.
