Servings: 22 cookies
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup brown sugar or brown monk fruit
- 1/3 cup sugar or monk fruit
- 1/2 cup creamy unsalted peanut butter at room temperature
- 1 egg
- 1 teaspoon vanilla extract
- 22 dark chocolate Hershey's Kisses
Mix the flour, baking soda, and salt.
Add the brown sugar, sugar, creamy unsalted peanut butter, egg, and vanilla extract to a separate bowl. Thoroughly combine the ingredients with an electric hand mixer or stand mixer.
Add the dry ingredients to the bowl with the wet ingredients. Thoroughly combine everything with your mixer. Then, use your hands to make sure the dough is fully combined.
Use a 1-tablespoon cookie scoop and roll the cookie dough into balls. This recipe makes 20-24 cookies, depending on size. We made 22 cookies. Optional: Roll the balls in sugar or monk fruit. Then, place them on a sheet pan with parchment paper. After that, press the cookie dough balls down with two fingers. Bake the cookies at 375°F for 7-9 minutes.
Once the cookies are cooked, carefully transfer them to a wire rack to cool. Let them cool for 8-10 minutes. Then, press a dark chocolate Hershey’s Kiss into the middle of each cookie and enjoy!
- Peanut Butter: For this recipe, we used room-temperature natural creamy unsalted peanut butter. If you don’t have unsalted peanut butter, you can use salted peanut butter. Just reduce the salt in this recipe to 1/4 teaspoon.
- Chocolate: Once the cookies are baked and slightly cooled, press the Hershey’s Kisses into the center of the cookies. Or, you can use Lily’s sugar-free chocolate instead.
- Cool: Once the cookies are baked, let them cool on a wire rack for 8-10 minutes before placing the Hershey’s Kisses in the center so they don’t melt.
