Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar or brown monk fruit
  • 1/3 cup sugar or monk fruit
  • 1/2 cup creamy unsalted peanut butter at room temperature
  • 1 egg
  • 1 teaspoon vanilla extract
  • 22 dark chocolate Hershey's Kisses

Instructions

  • Mix the flour, baking soda, and salt.
  • Add the brown sugar, sugar, creamy unsalted peanut butter, egg, and vanilla extract to a separate bowl. Thoroughly combine the ingredients with an electric hand mixer or stand mixer.
  • Add the dry ingredients to the bowl with the wet ingredients. Thoroughly combine everything with your mixer. Then, use your hands to make sure the dough is fully combined.
  • Use a 1-tablespoon cookie scoop and roll the cookie dough into balls. This recipe makes 20-24 cookies, depending on size. We made 22 cookies. Optional: Roll the balls in sugar or monk fruit. Then, place them on a sheet pan with parchment paper. After that, press the cookie dough balls down with two fingers. Bake the cookies at 375°F for 7-9 minutes.
  • Once the cookies are cooked, carefully transfer them to a wire rack to cool. Let them cool for 8-10 minutes. Then, press a dark chocolate Hershey’s Kiss into the middle of each cookie and enjoy!

Notes

  • Peanut Butter: For this recipe, we used room-temperature natural creamy unsalted peanut butter. If you don’t have unsalted peanut butter, you can use salted peanut butter. Just reduce the salt in this recipe to 1/4 teaspoon.
  • Chocolate: Once the cookies are baked and slightly cooled, press the Hershey’s Kisses into the center of the cookies. Or, you can use Lily’s sugar-free chocolate instead.
  • Cool: Once the cookies are baked, let them cool on a wire rack for 8-10 minutes before placing the Hershey’s Kisses in the center so they don’t melt.
