GROUND TURKEY ENCHILADA SKILLET
This ground turkey enchilada skillet is one of our weekly staples! It’s packed with the irresistible flavors of enchiladas while being a lighter option.

- 1 pound ground turkey breast
- 1/2 cup diced white or sweet onion
- 1 garlic clove crushed
- 1/4 teaspoon cumin
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 16 ounces enchilada sauce
- 1 tablespoon chipotle peppers in adobo sauce chopped
- 15 ounce can of black beans rinsed and drained
- 1 cup frozen corn
- 1/3 cup Mexican light cheese or light cheddar
- 1 bunch of cilantro chopped
- 3-4 green onions sliced
Lightly spray a nonstick large skillet or pan with olive oil. After that, add the diced onion and crushed garlic to the skillet. Sauté the onions and garlic. Then, move them to one side of the skillet.
Add the ground turkey breast to the skillet. Then, season both sides of the ground turkey with cumin, salt, and pepper. Cook the turkey over medium heat and use a spatula to break it up into small pieces.
Once the ground turkey is fully cooked add the enchilada sauce, chopped chipotle peppers in adobo sauce, rinsed and drained black beans, and frozen corn to the skillet. Mix to combine all the ingredients. Then, let everything simmer for 5-10 minutes. In the last few minutes sprinkle the shredded cheese over top. Place the lid on the pan to melt the cheese.
Once done, serve and top with chopped fresh cilantro and sliced green onions.
- Storage: You can store leftovers in an airtight container in the refrigerator for 3-4 days.
- Enchilada Sauce To Use: You can make this recipe with homemade or store-bought enchilada sauce. Use your favorite red enchilada sauce. Or, use green enchilada sauce if you prefer the taste.
- Optional Toppings: Some great options are cheese, cilantro, and green onions. Or, feel free to add your favorite toppings!
- Ground Turkey To Use: We used 99% fat-free ground turkey breast in this recipe. You could use any ground turkey that you prefer. For another option, use ground chicken breast or lean ground chicken.
- Chipotle Peppers In Adobo: We love the flavor that the chopped chipotle peppers in adobo sauce add to this enchilada skillet. If you prefer, you can omit them, or add up to an additional tablespoon for more spice.
- Beans To Use: We added black beans to this recipe, but if you prefer, you can swap them for pinto beans, or use a combination of both.
