GREEN CHILE EGG CASSEROLE WITH COTTAGE CHEESE

- 10 large eggs
- 16 ounces cottage cheese fat-free, low-fat, or full-fat
- 4 ounces mild diced green chiles
- 1/2 cup Mexican light cheese
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Crack all the eggs into a large bowl. Then, thoroughly whisk the eggs.
Add the cottage cheese, diced green chiles, cheese, salt, pepper, garlic powder, and onion powder to the bowl with the whisked eggs.
Mix all the ingredients in the bowl.
Spray a 9x9 baking dish with olive oil. Then, pour the egg casserole mixture into the baking dish.
Bake this green chile egg casserole at 350°F for 45-50 minutes, or until done.
Once done, carefully remove it from the oven and let it rest for 15-20 minutes before slicing and serving so it sets properly.
