GREEN CHILE EGG CASSEROLE WITH COTTAGE CHEESE

This green chile egg casserole with cottage cheese is a must-try! It’s delicious, high-protein, low-carb, perfect for meal prep, and incredibly easy to make!

Ingredients

  • 10 large eggs
  • 16 ounces cottage cheese fat-free, low-fat, or full-fat
  • 4 ounces mild diced green chiles
  • 1/2 cup Mexican light cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  • Crack all the eggs into a large bowl. Then, thoroughly whisk the eggs.
  • Add the cottage cheese, diced green chiles, cheese, salt, pepper, garlic powder, and onion powder to the bowl with the whisked eggs.
  • Mix all the ingredients in the bowl.
  • Spray a 9x9 baking dish with olive oil. Then, pour the egg casserole mixture into the baking dish.
  • Bake this green chile egg casserole at 350°F for 45-50 minutes, or until done.
  • Once done, carefully remove it from the oven and let it rest for 15-20 minutes before slicing and serving so it sets properly.
