GINGERBREAD MUG CAKE

This gingerbread mug cake is perfect for the holidays! It’s so easy to make, festive, delicious, packed with warm gingerbread spices, and ready in minutes.

Ingredients

  • 1/4 cup Kodiak Cakes Power Cakes Buttermilk Mix (or all-purpose flour)
  • 3 tablespoons unsweetened applesauce
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • 1 pinch of ground nutmeg
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon molasses
  • 4 teaspoons maple syrup, sugar, or sugar-free maple syrup
  • 1 egg

Instructions

  • Add the Kodiak Cakes or flour, unsweetened applesauce, ground ginger, ground cinnamon, ground nutmeg, baking powder, vanilla extract, sweetener, and egg to a large microwave-safe mug or bowl that holds at least 15 ounces.
  • Thoroughly mix all the ingredients.
  • Microwave the gingerbread mug cake for 1 minute and 30 seconds, or until fully cooked. If it’s not done yet, microwave it in additional 10-15 second intervals. Once done, let it slightly cool and enjoy!

Notes

  • Mug: Choose a microwave-safe mug that holds at least 15 ounces to prevent overflow. If you don’t have a mug, use a microwave-safe bowl or ramekin.
  • Microwave Time: Microwaves vary in power, so start with 90 seconds and check the cake, if it's still too wet, microwave in additional 10-15 second intervals. Be careful not to overcook the mug cake, as this can dry it out.
  • Don’t Over-Mix: Mix the ingredients until combined but avoid over-mixing, as it can lead to a dense, tough texture.
  • Bake: If you don’t have a microwave, bake this mug cake in the oven at 350°F for 15-20 minutes, or until a toothpick inserted comes out clean.
