FROZEN COTTAGE CHEESE BARK

If you have not tried frozen cottage cheese bark, it is a must-try! It is easy to make and you only need 4 simple ingredients.

Ingredients

  • 1 cup fat-free cottage cheese
  • 1 cup fresh chopped strawberries, reserve 4-5 strawberries and thinly slice them for the top
  • 1-2 tablespoons sweetener of choice, depending on the sweetness of the strawberries
  • 2 tablespoons mini chocolate chips

Instructions

  • Wash and dry the strawberries. Take your reserved strawberries and thinly slice them, about 1/4 inch slices down the strawberry. I like to use the center cuts of the strawberry for the top of the bark and use the rest of the strawberries to blend with the cottage cheese. Once you have about 8-12 slices of strawberries from the 4-5 strawberries, use those for the top of the bark then cut the stems off, and add the rest of the strawberries to a high-powered blender or food processor with the cottage cheese and your sweetener of choice.
  • Thoroughly blend the cottage cheese, strawberries, and your sweetener of choice.
  • Evenly spread the cottage cheese bark mixture on a sheet pan with parchment paper, making the bark about 1/4 inch thick.
  • Melt the chocolate in the microwave or use the double boiler method. Once the chocolate is melted, place dollops of chocolate on the bark. Then, use a knife or a spoon to swirl the chocolate evenly. If you don’t want to melt chocolate, just sprinkle the mini chocolate chips on top of the bark. Also, add the slices of strawberries on top of the bark.
  • Place the cottage cheese bark in the freezer on a sheet pan for 3-4 hours or until firm and frozen. Also, make sure nothing is covering the bark in the freezer. Once frozen, break the cottage cheese bark into six pieces and enjoy!

Notes

  • Melt Chocolate: You can melt chocolate chips or part of a chocolate bar in the microwave or use the double boiler method. Then, swirl the chocolate on top of the bark.
  • Cottage Cheese: Make sure to use high-quality cottage cheese. We used fat-free cottage cheese in this recipe but low-fat or full-fat will also work.
  • Storage: Store leftover cottage cheese bark in the freezer in a freezer-safe bag for 2-3 weeks.
