EASY CINNAMON ROLL BAKED OATS
These cinnamon roll baked oats taste just like a cinnamon roll! They are topped with gooey vanilla icing and they have a warm cinnamon flavor throughout.

For The Cinnamon Roll Baked Oats
- 1/2 cup quick oats or rolled oats
- 1/2 teaspoon baking powder
- 1 pinch of salt
- 5 teaspoons monk fruit, sugar, or sweetener of choice
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1/4 cup unsweetened vanilla almond milk or milk of choice
- 1 egg
For The Vanilla Icing
- 1 tablespoon powdered monk fruit sweetener or powdered sugar
- 2 drops unsweetened vanilla almond milk or milk of choice
- 2 drops vanilla extract
Blend the quick oats or rolled oats into oat flour.
Add the baking powder, salt, sweetener of choice, cinnamon, vanilla extract, and unsweetened vanilla almond milk to the blender and blend.
Lightly pulse in the egg.
Lightly spray an oven-safe ramekin with coconut oil. Then, pour the batter into the ramekin.
Place the ramekin on a baking sheet and bake at 350° F for 27-30 minutes.
To make the icing, combine the powdered sugar, unsweetened vanilla almond milk, and vanilla extract. Let the baked oats slightly cool, drizzle the icing on top, and enjoy!
- Gluten-Free: Just use certified gluten-free rolled oats or quick oats.
- Milk Options: We used unsweetened vanilla almond milk. Some other great options are regular unsweetened almond milk, unsweetened oat milk, or your milk of choice.
