EASY APPLE CINNAMON MUFFINS RECIPE

These healthy apple cinnamon muffins are soft, tender, and moist. Bursting with juicy apples and warm cinnamon, they’re an easy and delicious fall favorite!

Ingredients

  • 1 ¾ cup all-purpose flour
  • 3/4 cup sugar or 1:1 sugar-free sweetener
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 pinch of nutmeg
  • 2 large eggs whisked
  • 1/2 cup unsweetened applesauce
  • 2 tablespoons milk (add 1-2 tablespoons more if the batter is too thick)
  • 1 teaspoon vanilla extract
  • 1 cup diced Honeycrisp apples

Instructions

  • Wash, dry, and peel the apples. Then, evenly dice the apples into small pieces.
  • Add the flour, sweetener, baking powder, baking soda, salt, cinnamon, and nutmeg to a large bowl. Then, thoroughly mix these dry ingredients.
  • In a separate bowl, whisk together the eggs, unsweetened applesauce, milk, and vanilla extract.
  • Add the wet ingredients to the dry ingredients a little at a time, until fully combined, making sure not to over-mix. *Sugar-free sweeteners such as monk fruit tend to absorb more liquid, so if your batter is too thick, add another 1-2 tablespoons of milk and mix.
  • Lightly fold the diced apples into the batter.
  • Spray a non-stick silicone muffin pan with oil or add parchment paper muffin liners to a muffin tin. Then, pour the batter into the muffin pan, forming 10 muffins.
  • Bake the muffins at 350°F for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Once done, let the muffins slightly cool and enjoy!

Notes

  • Avoid Over-Mixing: Thoroughly combine the wet and dry ingredients, being careful not to over-mix the batter. Over-mixing can cause dense muffins.
  • How Many Apples To Use: You will need one cup of diced apples. This comes from about 2 medium-sized apples or one large apple.
  • How To Know When Muffins Are Done: You can check if the muffins are done by inserting a toothpick into the center of a muffin. If the toothpick comes out clean, they are done.
  • Storage: Store leftover apple cinnamon muffins in an airtight container on the counter at room temperature for 1-2 days or in the refrigerator for 3-4 days. Or, freeze them for 1-2 months.
