Add the flour, sweetener, baking powder, baking soda, salt, cinnamon, and nutmeg to a large bowl. Then, thoroughly mix these dry ingredients.
In a separate bowl, whisk together the eggs, unsweetened applesauce, milk, and vanilla extract.
Add the wet ingredients to the dry ingredients a little at a time, until fully combined, making sure not to over-mix. *Sugar-free sweeteners such as monk fruit tend to absorb more liquid, so if your batter is too thick, add another 1-2 tablespoons of milk and mix.
Lightly fold the diced apples into the batter.
Spray a non-stick silicone muffin pan with oil or add parchment paper muffin liners to a muffin tin. Then, pour the batter into the muffin pan, forming 10 muffins.
Bake the muffins at 350°F for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Once done, let the muffins slightly cool and enjoy!
