- 6 large eggs
- 1 cup cottage cheese
- 1/2 pound cooked sweet Italian chicken sausage
- 1/2 cup diced white onion
- 2.5 ounces crumbled light feta cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Slice the fully cooked sausage into half lengthwise, then slice each piece in half again. From there, chop the sausage into small pieces.
Add the chopped sausage and diced onion to a skillet over medium heat. Sauté until the chopped sausage is lightly browned and the onions are translucent. After that, remove the skillet from the heat and set it aside to cool slightly.
Crack the eggs into a large bowl and whisk them. Then, fold in the cottage cheese, crumbled light feta cheese, Italian seasoning, garlic powder, salt, pepper, and cooled sausage and onion.
Mix the ingredients in the bowl to combine.
Lightly spray a 9-inch pie dish or quiche pan with oil. Then, pour the mixture into the dish. Bake the quiche at 350°F for 45-55 minutes, or until the quiche is set and lightly golden on top.
Once the quiche is cooked, allow it to cool for at least 20 minutes so the cottage cheese sets before slicing and serving.
- Sausage Options: Use fully cooked sweet Italian sausage, or opt for spicy Italian chicken sausage, lean turkey sausage, or plant-based sausage for a vegetarian alternative.
- Cook Sausage: If you’re using raw sausage, slice the casing lengthwise and peel it off before cooking. Cook the sausage thoroughly, breaking it into crumbles until browned and no longer pink.
- Cottage Cheese: You can use fat-free, low-fat, or full-fat cottage cheese.
- Cheese Variations: Swap the feta cheese for shredded cheddar, mozzarella, Gruyere, Swiss, Monterey Jack, or goat cheese for a different flavor.
- Storage: Leftovers can be stored in an airtight container in the refrigerator for 3-4 days.
