- 4 large eggs
- 3/4 cup cottage cheese fat-free, low-fat, or full-fat
- 1/3 cup diced and seeded Roma tomato
- 1/2 ounce freshly grated Parmesan cheese
- 1 tablespoon chopped fresh basil, not packed
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Crack all the eggs into a large bowl. Then, whisk the eggs.
Add the cottage cheese, diced and seeded tomato, freshly grated Parmesan cheese, chopped fresh basil, onion powder, garlic powder, salt, and pepper to the bowl with the whisked eggs.
Spray a silicone non-stick muffin pan with olive oil so the egg bites don’t stick. Then, pour the mixture into the muffin pan. Make sure not to over-fill the muffin pan, leave some room for the egg bites to rise.
Bake the egg bites in the oven at 350°F for 22-26 minutes or until set and fully cooked. Once cooked, let them cool for about 5-10 minutes before removing them from the pan and serving.
- Meal Prep: You can always double this recipe to make more egg bites for meal prep.
- Storage: Store leftover egg bites in an airtight container in the refrigerator for 3-4 days.
- Mix In The Cottage Cheese: There is no need to blend the cottage cheese, just mix it into the whisked eggs with the rest of the ingredients.
- Egg Bites: Ensure the egg bites are set before you remove them from the muffin pan and serve them.
- Cheese To Use: We love the flavor grated Parmesan cheese adds to these egg bites. However, you can swap the Parmesan for shredded cheddar cheese, crumbled feta cheese, shredded Mozzarella, Swiss cheese, shredded Monterey Jack cheese, or shredded Gruyere cheese if preferred.
