COTTAGE CHEESE EGG BAKE

This cottage cheese egg bake is nutritious, easy to make, delicious, and high in protein! This recipe is a winner for its simplicity and versatility.

Ingredients

  • 8 large eggs
  • 16 ounces cottage cheese fat-free, low-fat, or full-fat
  • 1/3 cup sliced green onions green parts only
  • 1/2 cup Trader Joe's Mexican light cheese blend or light shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • olive oil spray

Instructions

  • Crack the eggs and whisk them in a large bowl.
  • Add the cottage cheese, the green parts of the sliced green onions, shredded cheese, salt, and pepper to the bowl with the whisked eggs.
  • Thoroughly mix all the ingredients. Customize by mixing in 1/4 to 1/2 cup of an add-in of your choice such as sautéed sliced mushrooms, diced tomatoes, cooked chopped sausage, cooked chopped bacon, or chopped fresh spinach.
  • Lightly spray a 9x9 baking dish with olive oil. Then, pour the egg bake mixture into the baking dish. Bake it at 350°F for 50-60 minutes, or until done.
  • Once cooked, carefully remove the egg bake from the oven and let it rest for about 20-30 minutes before slicing and serving. This allows the flavors to come together and for the cottage cheese to set.

Notes

  • Storage: You can store leftovers in the refrigerator for 3-4 days. Store them in an airtight container or wrap them in foil.
  • Cheese To Use: We use either light shredded cheddar cheese or Trader Joe’s Mexican light cheese blend. You can swap it for crumbled feta cheese, Parmesan cheese, Monterey Jack, shredded mozzarella cheese, or your cheese of choice.
  • Add Veggies: This egg bake is customizable! You can add veggies such as sliced sautéed mushrooms and chopped spinach.
