COTTAGE CHEESE BUFFALO CHICKEN SALAD

- 1 pound fully cooked shredded chicken breast rotisserie chicken works great
- 3/4 cup chopped celery
- 1/3 cup sliced green onions
- 3/4 cup whipped cottage cheese fat-free, low-fat, or full-fat
- 2-3 tablespoons Frank’s RedHot Buffalo Wings Sauce or your favorite hot sauce
- 1 tablespoon ranch seasoning
Chop the celery and slice the green onions.
Add the shredded fully cooked chicken, celery, and green onions to a large bowl.
Blend the cottage cheese until smooth and creamy in a blender, food processor, or use an immersion blender. Then, transfer it to a separate bowl.
Add the hot sauce and ranch seasoning to the bowl with the whipped cottage cheese.
Thoroughly mix the sauce until smooth and combined.
Pour the sauce into the large bowl and thoroughly mix until the chicken salad is evenly coated.
Serve right away, or store it in an airtight container in the refrigerator until ready to enjoy.
- Chicken to Use: Use fully cooked chicken for this recipe. Some great options are shredded rotisserie chicken, grilled chicken, baked chicken, air-fried chicken, slow cooker shredded chicken, poached chicken, or even canned chicken in a pinch.
