COTTAGE CHEESE BUFFALO CHICKEN SALAD

Ingredients

  • 1 pound fully cooked shredded chicken breast rotisserie chicken works great
  • 3/4 cup chopped celery
  • 1/3 cup sliced green onions
  • 3/4 cup whipped cottage cheese fat-free, low-fat, or full-fat
  • 2-3 tablespoons Frank’s RedHot Buffalo Wings Sauce or your favorite hot sauce
  • 1 tablespoon ranch seasoning

Instructions

  • Chop the celery and slice the green onions.
  • Add the shredded fully cooked chicken, celery, and green onions to a large bowl.
  • Blend the cottage cheese until smooth and creamy in a blender, food processor, or use an immersion blender. Then, transfer it to a separate bowl.
  • Add the hot sauce and ranch seasoning to the bowl with the whipped cottage cheese.
  • Thoroughly mix the sauce until smooth and combined.
  • Pour the sauce into the large bowl and thoroughly mix until the chicken salad is evenly coated.
  • Serve right away, or store it in an airtight container in the refrigerator until ready to enjoy.

  • Chicken to Use: Use fully cooked chicken for this recipe. Some great options are shredded rotisserie chicken, grilled chicken, baked chicken, air-fried chicken, slow cooker shredded chicken, poached chicken, or even canned chicken in a pinch.

  • Adjust the Heat: We recommend 2 tablespoons of buffalo sauce for just the right amount of heat. If you prefer it spicier, you can increase it to 3 tablespoons. Keep in mind that the salad may taste slightly less spicy after chilling in the fridge.
