COTTAGE CHEESE ALFREDO
This cottage cheese Alfredo sauce is so decadent and creamy. Add it to your favorite pasta or pasta substitute and you will have the best pasta or fettuccine Alfredo ever!

Servings: 4 servings
- 1/2 cup 2% milk
- 1 ½ cups fat-free cottage cheese
- 1 teaspoon Kerrygold pure Irish butter
- 1 large garlic clove crushed
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper or to taste
- 1 teaspoon Italian herbs we used Gourmet Garden
- 1 ⅓ ounce freshly grated parmesan cheese
- 1 ½ teaspoons cornstarch
Add the milk and cottage cheese to a blender and blend until smooth.
Add the butter to a pan over low heat on the stove. Then, crush the garlic clove into the pan. Saute the garlic with the butter on low.
Add the blended cottage cheese mixture to the pan. Then, add the salt, pepper, Italian herbs, and freshly grated parmesan cheese. Stir and combine the ingredients. Also, make sure the heat is not too high, you don’t want to burn the sauce. Cook everything on low so the cottage cheese doesn't separate or become grainy.
Continue to stir until you have a low simmer. At this point, add the cornstarch and continue to mix until the sauce thickens up.
Boil your favorite pasta, drain the pasta, add it to the pan with the sauce, and enjoy!
- Milk Options: You can use whole milk, 2%, 1%, or fat-free milk in this recipe.
- Cottage Cheese: For the cottage cheese in this recipe, you can use full-fat, low-fat, or fat-free.
- Add More Protein: To add even more protein to this dish, you can add grilled chicken breast or some cooked shrimp.
