CHOCOLATE PROTEIN MUG CAKE

Ingredients

  • 3 tablespoons Kodiak Cakes Buttermilk Power Cakes Mix
  • 2 tablespoons Dutch-processed cocoa powder
  • 2 tablespoons sugar or 1:1 sugar-free sweetener
  • 1 tablespoon chocolate protein powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons 0-fat Greek yogurt
  • 2 tablespoons milk of choice
  • 1 large egg

Instructions

  • Add the Kodiak Power Cakes Mix, Dutch-processed cocoa powder, sweetener, chocolate protein powder, and baking powder to a large microwave-safe bowl or mug that holds at least 15 ounces (or separate the batter into two mugs). Then, thoroughly mix these dry ingredients.
  • Pour the vanilla extract, Greek yogurt, milk, and egg into the bowl.
  • Mix all the ingredients, making sure there are no lumps of Greek yogurt. Ensure the batter is combined, but avoid over-mixing so your mug cake stays light and airy. If using a sugar substitute and the batter is too thick, add another teaspoon of milk as needed.
  • Microwave the mug cake for 1 ½ to 2 minutes, depending on your microwave, or until the cake is fully cooked and set in the center.
  • Once done, carefully remove the mug cake from the microwave, let it slightly cool, and enjoy!

Notes

  • Chocolate Chips: You can mix some chocolate chips into the batter or sprinkle them on top before microwaving the mug cake for an extra burst of chocolate flavor
  • Flour: If you don't have Kodiak Cakes, substitute with all-purpose flour, oat flour, or whole wheat flour.
  • Bake: You can bake this mug cake in the oven instead. To do this, lightly spray an oven-safe baking dish with oil, pour the batter into the dish, and bake the cake at 350°F for 15-20 minutes, or until a toothpick comes out clean.
