CHOCOLATE PROTEIN MUG CAKE

- 3 tablespoons Kodiak Cakes Buttermilk Power Cakes Mix
- 2 tablespoons Dutch-processed cocoa powder
- 2 tablespoons sugar or 1:1 sugar-free sweetener
- 1 tablespoon chocolate protein powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 2 tablespoons 0-fat Greek yogurt
- 2 tablespoons milk of choice
- 1 large egg
Add the Kodiak Power Cakes Mix, Dutch-processed cocoa powder, sweetener, chocolate protein powder, and baking powder to a large microwave-safe bowl or mug that holds at least 15 ounces (or separate the batter into two mugs). Then, thoroughly mix these dry ingredients.
Pour the vanilla extract, Greek yogurt, milk, and egg into the bowl.
Mix all the ingredients, making sure there are no lumps of Greek yogurt. Ensure the batter is combined, but avoid over-mixing so your mug cake stays light and airy. If using a sugar substitute and the batter is too thick, add another teaspoon of milk as needed.
Microwave the mug cake for 1 ½ to 2 minutes, depending on your microwave, or until the cake is fully cooked and set in the center.
Once done, carefully remove the mug cake from the microwave, let it slightly cool, and enjoy!
- Chocolate Chips: You can mix some chocolate chips into the batter or sprinkle them on top before microwaving the mug cake for an extra burst of chocolate flavor
- Flour: If you don't have Kodiak Cakes, substitute with all-purpose flour, oat flour, or whole wheat flour.
- Bake: You can bake this mug cake in the oven instead. To do this, lightly spray an oven-safe baking dish with oil, pour the batter into the dish, and bake the cake at 350°F for 15-20 minutes, or until a toothpick comes out clean.
