- 1 cup rolled oats
- 3 tablespoons Dutch-processed cocoa powder
- 3 tablespoons maple syrup
- 3 ounces pitted Medjool dates
- 1 pinch of salt
- 2 tablespoons mini chocolate chips
Add the rolled oats, Dutch-processed cocoa powder, maple syrup, pitted Medjool dates, and salt to a food processor with an S-shaped blade.
Pulse and process until you thoroughly grind up all of the ingredients and they stick together.
Once thoroughly combined, remove the mixture from the food processor and add it to a bowl. Then, fold in the mini chocolate chips.
Use a one-tablespoon cookie scoop and use your hands to roll the energy balls into balls. This recipe makes 14-16 energy balls. Once rolled, you can enjoy them right away or save them for later. Just make sure to store them in an airtight container in the refrigerator, where they will last for about one week.
