CHICKEN CAESAR SALAD
This chicken Caesar salad is my take on a classic favorite made lighter! It combines tender chicken with crisp romaine and our creamy healthy Caesar dressing.

For The Salad
- 1 head of romaine lettuce washed and chopped
- 1 pound fully cooked chicken breast sliced or shredded
- 2 tablespoons freshly grated parmesan cheese
For The Caesar Dressing
- 1/3 cup 0-fat Greek yogurt
- 1 tablespoon milk adjust for desired consistency
- 2 tablespoons grated Parmesan cheese
- 2 teaspoons lemon juice
- 1/2 teaspoon Worcestershire sauce
- 1/2 teaspoon red wine vinegar
- 1/2 teaspoon anchovy paste
- 1/2 teaspoon stone-ground mustard or Dijon
- 1/4 teaspoon minced garlic or garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon cracked black pepper
Wash, dry, and chop the romaine lettuce. Also, slice or shred the fully cooked chicken breast.
Add the 0-fat Greek yogurt, milk, grated Parmesan cheese, lemon juice, Worcestershire sauce, red wine vinegar, anchovy paste, mustard, garlic, salt, and pepper to a bowl. Then, thoroughly mix these ingredients to form the Caesar dressing.
Assemble the Caesar salad. Add the chopped romaine lettuce and cooked chicken to a bowl. Drizzle the Caesar dressing over the salad. Toss the salad in the bowl until it is evenly coated with the dressing. Then, shred additional Parmesan cheese over the salad, serve, and enjoy!
- Dressing Consistency: If you prefer a thinner Caesar salad dressing, add one tablespoon of milk at a time until the desired consistency is reached.
- How To Cook The Chicken: For this recipe, slice, chop, or shred fully cooked chicken. In terms of cooking the chicken, you can use cooked shredded rotisserie chicken, grill chicken, bake it in the oven, slow cook the chicken, or air fry it.
