CARROT APPLE SALAD
This carrot apple salad is tossed in a honey lemon dressing and packed with shredded carrots, chopped apples, green onions, and cilantro.

- 2 pounds carrots peeled and shredded
- 1/4 cup sliced green onions
- 1/2 cup chopped cilantro or flat-leaf parsley, 1 bunch
- 2 medium apples, we used Pink Lady apples
- 1/4 cup chopped raisins or cranberries optional
- 1/4 cup sunflower seeds, walnuts, or almonds optional
For The Dressing
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon honey
- 1/2 teaspoon stone-ground mustard or dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Peel the carrots. Then, shred them with a box grater or food processor.
Slice the green onions, chop the cilantro, and chop the apples into small pieces.
Add the carrots, green onions, cilantro, and apples to a large bowl.
Thoroughly combine the olive oil, lemon juice, honey, stone-ground mustard, salt, and pepper in a bowl.
Pour the dressing over the salad, toss the salad with the dressing, and enjoy!
- Vegan Option: To make this carrot salad vegan, substitute the honey for maple syrup.
- Shred The Carrots: Peel all of the carrots and then use a box grater or food processor to shred them.
- Apples: We used Pink Lady apples. Some other apples that work well are Honeycrisp, Fuji, and Gala.
