BERRY PARFAIT WITH GREEK YOGURT
This berry parfait recipe is the perfect healthy breakfast or snack! These parfaits are layered with smooth creamy yogurt and sweet berries.

- 1 cup 0-fat Greek yogurt
- 2 teaspoons vanilla protein powder of choice
- 1 teaspoon vanilla extract
- 6 ounces raspberries
- 6 ounces blackberries
- 6 ounces strawberries
Wash and dry the raspberries, blackberries, and strawberries. Cut the strawberries into smaller pieces.
In a bowl, combine the 0-fat Greek yogurt, vanilla protein powder, and vanilla extract.
Assemble each parfait in a jar. Layer the jars with the yogurt mixture in between each layer of fruit. Enjoy after making them so the berries stay fresh.
- Serving: Since the berries are fresh, I would recommend eating these parfaits after making them.
- Toppings: Some great toppings for these parfaits are granola, honey, whipped cream, chopped nuts, chocolate chips, and chocolate sauce.
- Berries of Choice: We used fresh strawberries, blackberries, and raspberries in our parfaits. However, you can use any fruit of your choice. Some other fruits that we like to use are bananas, blueberries, mango, and peach.
- Frozen Fruit: If you use frozen berries, assemble the parfaits the night before and refrigerate them overnight. In the morning, the fruit will be defrosted and ready to go!
