  • 1/3 cup quick oats or rolled oats
  • 1/2 teaspoon baking powder
  • 1 pinch of salt
  • 5 teaspoons monk fruit, sugar, or sweetener of choice
  • 1/2 teaspoon cinnamon
  • 1 pinch of nutmeg
  • 1/2 teaspoon vanilla extract
  • 1/3 cup mashed banana, about one small ripe banana
  • 1 egg

Instructions 

  • Blend the quick oats into oat flour.
  • Add the baking powder, salt, sweetener of choice, cinnamon, nutmeg, vanilla extract, and banana to the blender and blend.
  • Lightly pulse in the egg.
  • Lightly spray an oven-safe ramekin with coconut oil. Then, pour the batter into the ramekin.
  • Place the ramekin on a baking sheet and bake at 350° F for 26-28 minutes. Let the baked oats slightly cool and enjoy!
