AMAZING PEANUT BUTTER COOKIES GLUTEN FREE
These are the best gluten free peanut butter cookies with almond flour! They are soft, chewy, and packed full of rich peanut butter flavor.

- 1/2 cup almond flour
- 1/3 cup PB2 (powdered peanut butter)
- 1/4 cup brown sugar or golden monk fruit
- 1/3 cup regular sugar or monk fruit
- 1/2 teaspoon baking soda
- 1/3 cup all-natural creamy salted peanut butter
- 1 egg
- 1 teaspoon vanilla extract
Add the almond flour, PB2, brown sugar or golden monk fruit, regular sugar or monk fruit, and baking soda to a large bowl. Mix these ingredients.
Add the peanut butter, egg, and vanilla to the bowl. Thoroughly combine all of the ingredients.
Form 16-18 peanut butter cookies on a sheet pan with parchment paper. We rolled the dough into small balls and pressed them down with two fingers. Bake the cookies at 375℉ for 10-12 minutes and enjoy! These cookies are best enjoyed after they have slightly cooled because that is when the flavors come through the most.
- Powdered Peanut Butter: You can use PB2 or PBfit.
