Cut the zucchini into even-sized sticks. To do this, cut both ends off of the zucchini. Then, cut the zucchini in half down the middle and then cut it in half lengthwise. From there, cut the zucchini lengthwise into 1/2-inch sticks.
Add the cornflakes to a large Ziploc bag, seal the bag, and crush the cornflakes with the back of a measuring cup or a rolling pin. Thoroughly crush them into a fine consistency. Then, add the crushed cornflakes to a shallow bowl.
Add the grated parmesan cheese, salt, pepper, garlic powder, onion powder, basil, and oregano to the bowl with the crushed cornflakes. Thoroughly mix these ingredients.
Whisk two eggs and add them to a separate shallow bowl.
Place the zucchini sticks in the whisked egg mixture and then directly into the cornflake mixture. Use your fingers to press the cornflake coating on the zucchini sticks.
Add the zucchini sticks to an air fryer and lightly spray them with oil. Make sure to air fry them in batches, not all at once. Don’t overcrowd the air fryer or stack the fries, make sure there is enough room.
Air fry the zucchini fries for 6-10 minutes, depending on your air fryer and the size of the zucchini sticks. There is no need to preheat the air fryer. Check on the zucchini fries to make sure they don’t burn and shake the basket a few times while they cook to toss them around so they cook evenly. You will know they are done when they are crispy and golden brown. Repeat this process with the other batches. Then, carefully remove the zucchini fries from the air fryer and enjoy them with your favorite dipping sauce.
