Wash and dry the potatoes. Then, evenly dice them into about 1/2-inch cubes.
Optional: Let the diced potatoes soak in a bowl of cold water for 10-30 minutes to remove some of the starches. If you do this, completely dry the potatoes afterward before seasoning them.
Add the diced potatoes to a large bowl. Then, add the olive oil, salt, garlic powder, oregano, and thyme to the bowl.
Thoroughly mix the potatoes to coat them with the seasonings.
Add a parchment paper liner to your air fryer basket. Then, add diced potatoes to the air fryer basket. Don’t overcrowd the air fryer, and cook these potatoes in batches.
Air fry the diced potatoes at 400°F (200°C) for 10-14 minutes, depending on your air fryer and the size of the diced potatoes. Shake them halfway so they cook evenly. Once done, remove them from the air fryer and serve them warm.
