WHITE BEAN TUNA SALAD RECIPE

This Tuscan white bean tuna salad recipe is delicious and easy to make. It is perfect for meal prep, stuffed in a tomato, or just straight out of the bowl!

Ingredients

  • 2 cans of albacore tuna in water
  • 1, 15 ounce can of cannellini beans (white beans)
  • 1/2 cup cherry tomatoes chopped
  • 1/4 cup red onion diced
  • 3 tablespoons capers drained
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley or 1.5 teaspoons dried
  • 1 tablespoon chopped fresh basil or 1 teaspoon dried
  • 2 teaspoons olive oil
  • 3 tablespoons red wine vinegar

Instructions

  • Drain the albacore tuna. Then, rinse and drain the white cannellini beans. Also, chop the cherry tomatoes and dice the red onion.
  • Add the albacore tuna, white cannellini beans, tomatoes, red onion, capers, salt, pepper, garlic powder, parsley, basil, olive oil, and red wine vinegar to a large bowl.
  • Thoroughly mix the tuna salad and enjoy!

Notes

  • White Beans: You can use cannellini beans or Great Northern beans.
  • Tuna Options: Use canned tuna in water, not oil. Some great options are albacore, tongol, yellowfin, or skipjack tuna. If you only have tuna in oil, drain it and omit the oil from this recipe.
  • Meal Prep: If you meal prep, this recipe is for you! Store leftovers in an airtight container in the refrigerator for 2-3 days.
