- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 2 eggs
- 4 mashed bananas
- 3/4 cup sugar or monk fruit
- 1 ½ cups all-purpose flour
- 1/3 cup cacao powder (or unsweetened cocoa powder)
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons mini chocolate chips
Add the unsweetened applesauce, vanilla extract, and 2 eggs to a bowl. Then, thoroughly mix all of the ingredients together. After that, add the 4 bananas to the bowl and mash them with a fork or spatula. Make sure that all of the ingredients are combined and smooth.
Get another bowl for the dry ingredients and add the monk fruit or sugar to it. Then, sift the flour, cacao powder (or unsweetened cocoa powder), and baking soda into the bowl. Next, add the salt.
Add the dry ingredients to the wet ingredients a little at a time and mix until they are thoroughly combined. Then, add the mini chocolate chips to the bowl and fold them in. Also, you can save some of the chocolate chips to put on top of the muffins before baking.
