Ingredients

  • 1 cup fat-free cottage cheese
  • 1/3 cup tomatillo salsa
  • 1/2 cup white beans
  • 1/2 cup corn
  • 1 cup cooked chopped chicken breast
  • 1 tablespoon chopped fresh cilantro
  • 2 tablespoon sliced green onions
  • 1/4 slice lime wedge

Instructions

  • Rinse and drain the white beans. Also, defrost the frozen corn. Then, finely chop the cilantro and slice the green onions.
  • Mix the cottage cheese and tomatillo salsa. This is the base of your savory bowl.
  • Add the white beans, corn, and cooked chopped chicken breast on top of your cottage cheese mixture.
  • Top your bowl with cilantro, green onions, a squeeze of lime juice, and any additional toppings.

  • Cottage Cheese Options: We used fat-free cottage cheese in this recipe. Low-fat or full-fat also work.
  • Beans: We used white beans as they complement the flavors of the chicken and salsa. However, pinto beans would also be a great option.
