- 1 cup fat-free cottage cheese
- 1/3 cup tomatillo salsa
- 1/2 cup white beans
- 1/2 cup corn
- 1 cup cooked chopped chicken breast
- 1 tablespoon chopped fresh cilantro
- 2 tablespoon sliced green onions
- 1/4 slice lime wedge
Rinse and drain the white beans. Also, defrost the frozen corn. Then, finely chop the cilantro and slice the green onions.
Mix the cottage cheese and tomatillo salsa. This is the base of your savory bowl.
Add the white beans, corn, and cooked chopped chicken breast on top of your cottage cheese mixture.
Top your bowl with cilantro, green onions, a squeeze of lime juice, and any additional toppings.
- Cottage Cheese Options: We used fat-free cottage cheese in this recipe. Low-fat or full-fat also work.
- Beans: We used white beans as they complement the flavors of the chicken and salsa. However, pinto beans would also be a great option.
