THE BEST EASY AND HEALTHY GUACAMOLE

When making this healthy guacamole recipe I wanted to lighten it up and maximize the amount of guacamole you could enjoy. This recipe is super easy to make and it’s incredibly delicious and creamy.

Ingredients

  • 1/2 jalapeño (small to medium-sized)
  • 1/2 lime
  • 1 garlic clove
  • 1/2 teaspoon salt
  • 1/2 cup diced white or sweet onion
  • 1/2 cup cilantro
  • 3 Roma tomatoes
  • 2 avocados (medium-sized)
  • 1/4 cup 0-fat Greek yogurt

Instructions

  • Cut a jalapeño in half and take out the inside with the seeds. Chop half of the jalapeño into tiny pieces and put it into a bowl.
  • Squeeze half of a lime into the bowl.
  • Crush 1 clove of garlic and add it to the bowl as well.
  • Add the salt and diced onion to the bowl. 
  • Take the cilantro off the stems and finely chop it. Then, add it to the bowl.
  • Slice 3 Roma tomatoes in half and remove the seeds. After that, finely chop the tomatoes into small pieces and add them to the bowl. Thoroughly combine all of the ingredients in the bowl.
  • Slice the avocados in half and take out the pits. Put the avocados in a separate bowl and mash them. A potato masher or fork works well to mash avocados.
  • Add the 0 fat Greek yogurt to the bowl with the avocados and thoroughly combine the ingredients. Then, add the ingredients from the other bowl and combine everything.

Notes

  • Serving: This recipe makes about 2-3 cups of guacamole.
  • Storage: It’s best to eat guacamole right after making it, but it can be stored in the refrigerator for up to 2 days in an airtight container.
